I’m currently trying to recreate the Lebkuchen from a local bakery. That one is slow going and I’m nowhere near where I need to be. I hope to have them in a reasonable version by December. I can’t get the cookie just right. They have ground hazelnuts in them, I think. Real Lebkuchen will always turn out hard right after baking, you’re supposed to store it in a tin box with an apple wedge, after a couple of days they will turn the right kind of soft eventually. This. The tricky thing about getting lebkuchen right is they soften and the flavor intensifies over time, so you won’t really know how the recipe turned out right away. My Oma used to start to make them in November. I don’t mind tricky if you don’t mind posting them! I’m so mad because I had an Official I’m Not Yelling I’m A Redhead That’s How We Talk Shirt recipe that was perfect, and it was on paper instead of typed into my recipe database, and I lost it. I still haven’t found a base recipe to start from, so I’d love yours to try. I perfected my chocolate chip recipe a couple of years ago, and have been riding those laurels until only last week when I did something unintentionally that actually made them even better. It’s always a work in progress.
